Roasted Red Black-eyed Pea Andouille Sausage Sauce and Bagel Bowl
Leftover version #3 of the Single Pea and Andouille Suasage Stuffed Roasted Red Bells. This is the hearty tomato based sauce borrowed directly from the previous smoked bell pepper experiment reheated and topped with half of a toasted poppy seed bagel that some co-workers hid in my book bag as a prank.

A hearty tomato based sauce borrowed directly from the previous smoked bell pepper experiment reheated and served with tri color rotini noodles. Served with baby spinach salad topped with roasted onions, mushrooms, and tomatoes with sesame oil, thyme, roasted garlic, pepper, and balsamic vinagrette, and a little sugar.
