HAM AND BARLEY STIR-FRY
Leftover holiday ham skillet fried with chopped shallot, celery, carrots, green peppers, and mushrooms. Some butter. Some olive oil. Served atop cooked barley and a squirt of horseraddish mustard.

HAM AND BEANS
This is a family staple that is served traditionally with cornbread (my Dad puts a little syrup on his cornbread before eating). Leftover holiday ham, including the huge fatty chunks, thrown into the crock with the beans (1.5 can great northern, 1 can pinto) and onions and celery and a little ginger and a little shallot. S&P to taste. The liquid from the bean cans and 0.5 can of water. Then during the cooking process I siphoned out about 1.25 cups of liquid. I also removed the bigger chunks of ham about 45min before eating and trimmed off most of the fat. Served with jalapeno black pepper brown sugar cornbread made with cornbread muffin mix.



The trimmed fat with some other trash I was throwing away.
