Roasted Red Black-eyed Pea Andouille Sausage Sauce and Bagel Bowl
Leftover version #3 of the Single Pea and Andouille Suasage Stuffed Roasted Red Bells. This is the hearty tomato based sauce borrowed directly from the previous smoked bell pepper experiment reheated and topped with half of a toasted poppy seed bagel that some co-workers hid in my book bag as a prank.

Rating: 8.02

Roasted Red Black-eyed Pea Andouille Sausage Sauce with Noodles
Leftover version #4 of the Single Pea and Andouille Suasage Stuffed Roasted Red Bells. A hearty tomato based sauce borrowed directly from the previous smoked bell pepper experiment reheated and served with tri color rotini noodles. Served with baby spinach salad topped with roasted onions, mushrooms, and tomatoes with sesame oil, thyme, roasted garlic, pepper, and balsamic vinagrette, and a little sugar.

To begin this I think is the top rated item in my log. I came across this sweet deal on red peppers at my local Kroger and bought two of them. Then, before getting started I did some research at a local cantina >> Nuevo Laredo. I ordered the Chile Relleno. They serve theirs with "meat y potatoes." Mine was meat y black-eyed peas since I still had some left over from other cooking projects. Also, they breaded and fried theirs. Mine was naked in that regard.



Here's my opus:
Single Pea and Andouille Suasage Stuffed Roasted Red Bells
Giant roasted red bell peppers stuffed with Andouille sausage, onions, celery, black-eyed peas, stewed toms, garlic, and spices (chili powder, parsely flakes, thyme, crushed red pepps, salt and pepper, a little ginger and cinnamon, and a dash or more of worcestershire. Topped with a sauce containing much of the same and some shredded processed American Smart Heart cheese.

Rating: 8.59

NOTES: 1 variation for leftovers was to serve the meal atop half of a poppyseed bagel that some co-workers hid in my book bag. That was mean, I thought at first. I threw the bagel in the back of my truck when I noticed it stuffed in my book bag. But on the way home I realized that I was out of lettuce and could use the bagel as a bedding for the leftovers. It was kind of like a little personal pizza.

For dessert with leftover session #1 I had Kroger Lite Cherry Cheesecake yogurt. And for dessert with LS#2 I had Kroger Lite Orange yogurt. With the original eating session I desserted on Kroger Lite Key Lime Pie yogurt. Kroger Lite yogurts are great. They have all sorts of crazy flavors.

Here's how the Super Bowl XL gathering went down >>


Jason tossed his cookies after a wonderful double appetizer of jumbo shrimps (provided by his mother complete with instructions written on the Ziploc bag) and a bag of edamame. Both the shrimps and the edamame were enjoyed with BRONCO BOB'S TANGY APRICOT CHIPOTLE SAUCE. Jason's girlfriend did not come with specific cooking instructions or a spicy sauce but she was an enjoyable guest.


Ben arrived with his girlfriend (sans cooking instructions und sauce). He got himself a bowl of SBXL Andouille and BEP Chili (Super Bowl XL Andouille and Black-Eyed Pea Chili with onions, red bell pepper, spices, brown sugar, and zesty catsup. Served atop honey butter peppered cornbread. Rating: 6.68. Alternatively the chili was served atop processed chocolate chip cookie (cookie did not soak up chili as well as the cornbread, but the choco hint was tempting and might be use in subsequent chili concoctions).

Jason really enjoyed the Honey Butter Peppered Cornbread (Cornbread muffin mix enhanced with melted butter (but I think it's some kind of fake butter - lower cholesterol and all that, vegetable spread), fresh ground pepper, and a healthy drizzle of honey. I intended to add paprika this time but forgot. Once I added finely diced jalepenos which worked nicely. Rating: 6.21.)

Then Ben got the fancy idea that the chili might taste good with the cheap processed M&M cookies that he brought over from Kroger. The cookie gods were not happy with this. In his attempt the cookie or chili gods or both punished Ben by making him spill an entire bowl of this retarded creation all over his pant legs and socks and on to the floor (luckily he took his shoes off at the door and luckily I have concrete floors.)



Then Ben had to clean up after himself in embarrasment.


The Steelers won. No one was paying attention to that, but they did. And they beat the spread or the cover or the mop or whatever the H the proper gambling term is. My brother was there too but he didn't do anything noteworthy. According to Ben the hardened chili on his pant leg still smelled appetizing the next morning.

HAM - BLACK EYED PEAS - GREEN PEAS - ONION - CELERY - CREAM OF MUSHROOM - SPICES: roasted garlic, pepper, cilantro, cumin, cayenne pepper - LIQUID STUFF: a little worcestershite, water. I call it >> Double Peas and Ham.
