9:23 PM >> Italian Grilled Cheese

Grilled cheese ain't just American. The French have been doing it too. Goes great with a refreshing cold dram of Pernod, which is a sister to the banned absinthe sans wormwood.

Here's the lo-do (or low-down as they say, I say lo-do [low dough]):
Slices of bread brushed with olive oil, sprinkled with pepper, roasted garlic powder, and basil. And then covered with sauteed onions and asiago cheese. Baked in the oven.

Rating: 7.58

9:23 PM >> Rainman Ste. 1833A, 2nd Generation

We all remember those memorable Rainman moments, the underwear being thrown from the car, the Abbot and Costello solo act, “Hot water burn baby.” I couldn’t help but conjure these thoughts as a walked into my brother’s room and found a desk directly in front of his television, the writing materials, and the episode of Wheel of Fortune. I though that he had transformed into the lovable idiot (savant) brother we all have. I didn’t want to disrupt anything in the room at that point in fear of seeing a raving retarded reaction. Several days later I walked into the living room and found this, yet again another Rainman television/desk set up. Yes, this is my brother….and I love him. Tell him Ed, “Kmart sucks.”

[NB, That chair there was modified to near perfection today by me. It was wobbly and uncomfortable. After inspecting the underside it was clear that the old joints were loose. So I added some reinforcement screws and all is sturdy now. Only it's just a little short to work well ergonomically with the typewriter stand that I am using for my laptop, so my back and shoulders are a little sore.

Check out the amazing
history of the chair. And don't forget that Thomas Jefferson invented the swivel chair.]

12:10 PM >> Fortune cookie Friday

Being Friday I feel this is an excellent time for some sound fortune cookie advice. Pay heed. Enjoy the weekend. Unfortunately, I'll be toiling away. My weekend will come some time in the middle of next week. I am hoping.

4:45 AM >> More corned beef inspiration

This alteration on a form was better than the original. It is Corned Beef Chili Enchiladas. They are all of the following:

Corned Beef Chili rolled in corn tortillas covered with green chili enchilada sauce, a four cheese mixture of shredded cheese, and crushed red pepper. Then baked to perfection with love.

And they received an 8.25 rating as compared to the stand alone plain Corned Beef Chili rating of 8.19. That's a 6 tenths increase. Amazing.

I do apologize to you out there who do not enjoy seeing the foods that I eat and create. They are an inspiration to me. When a food idea pops into my head I cannot wait till the next meal time rolls around to get started on it. And when I have crock pot leftovers you can't expect me to eat it the same way over and over again until it's all used up. I've got to improvise and takes things to the borders of my creativity and beyond in order to please my palette.

I'm not the only freak out there obsessed with the things that I eat. Just check out what author and food enthusiast Tucker Shaw was up to in 2004 (Everything I Ate: A Year in the Life of My Mouth).

Here's an interview with Tucker from the Gothamist.

11:50 PM >> Rainman Ste. 1833A

My brother call this my Rainman suite. It is a temporary arrangement in my room. My desk is situated right in front of my TV and next to my bed. That way I can work just feet from where I wake in the morningl. It's perfect.

9:52 PM >> Cooking Weird With Ed

Enroll today for Cooking Weird With Ed. This fall's Cooking Wierd With Ed is takign early enrollment now. Week one you learn what to do with all those random never used cans of Corned Beef Hash in the pantry.

Tonight I crocked up a batch of one of the best chilis I have ever made. Corned Beef Chili. I contians largely chopped Vidalia onions and green peppers sauteed with a little garlic and pepper. They were combined in the crock with stewed toms, barley, white hominy, Rotel Chili Fixins, and a can of corned beef. Mostly for seasoning I used just pepper and salt, a tad of cayenne at one point.

The result is a 8.19 rating.

Enjoy.

7:37 AM >> High times, low times

This man, this bus stop lounger, was spotted reading High Times. He looks like a professional landscaper with the grass clippings bag by his side. He's probably reading up on some ways to better his crop for next season.
